- 1 lb. pinto beans (dry)
- 3 lb. pork roast
- 7 c. water
- 1/2 c. chopped onion
- 2 cloves garlic, minced
- 1 Tbsp. salt
- 2 Tbsp. chili powder
- 1 Tbsp. cumin
- 1 tsp. oregano
- 1 (4 oz.) can chopped green chilies
- 1 (2 oz.) can dried pimento
Directions

1Place beans, pork roast, water, onion, garlic, seasonings, chilies and pimentos in heavy kettle and simmer 5 hours or until roast is tender.

2Remove roast and break with fork.

3Return to bean pot; cook uncovered until thick, about 1/2 hour.

4Serve over corn chips.

5Pass condiments for choice of toppings such as diced tomato, diced avocado, sliced green onion, grated Cheddar cheese, sour cream, chopped olives, etc.

6Serve with hot or medium pepper sauce.
