- 1/4 cup parsley, finely chopped
Directions

1Preheat griddle or frypan.

2Brush oil over vegetables, cook until golden brown and just cooked through.

3Layer the vegetables on a lightly greased baking tray, using the eggplant as a base, place slices of cheese between the vegetables.

4Secure with a skewer if desired.

5Bake at 200c for 10 minutes or until cheese is just melted.

6Sprinkle with parsley, serve.
