  • oil for grilling
  • 2 eggplants, cut crosswise into 2cm slices Safeway 1 ea For $1.28 thru 02/09

  • 1 yellow capsicum, cut into four lengths and half again
  • 1 red capsicum, cut into four lengths and half again
  • 4 KRAFT FREE Singles slices, cut into thirds Target 2 For $5.00 thru 02/06
  • 1/4 cup parsley, finely chopped

Directions

    Preheat griddle or frypan.

    Brush oil over vegetables, cook until golden brown and just cooked through.

    Layer the vegetables on a lightly greased baking tray, using the eggplant as a base, place slices of cheese between the vegetables.

    Secure with a skewer if desired.

    Bake at 200c for 10 minutes or until cheese is just melted.

    Sprinkle with parsley, serve.
