  • 1 larded beef tenderloin
  • 1/2 c. dry white wine
  • 1 Tbsp. meat extract
  • 1 shallot or green onion
  • 1 Tbsp. butter
  • 1 tsp. tarragon
  • pinch of cayenne pepper
  • 1/2 tsp. lemon juice or more if desired

    Bake larded beef tenderloin in flat, foil lined pan for 3/4 hour in a 450° oven.

    Remove string and larding.

    Slice and pour sauce over meat.
