- 1 Tbsp. meat extract
- 1 shallot or green onion
- 1 Tbsp. butter
- 1 tsp. tarragon
- pinch of cayenne pepper
- 1/2 tsp. lemon juice or more if desired
Directions

1Bake larded beef tenderloin in flat, foil lined pan for 3/4 hour in a 450° oven.

2Remove string and larding.

3Slice and pour sauce over meat.
