- 15 lb. chayotes
- 4 large onions
- 6 red bell peppers
- 1 large bunch celery
- 1 large cauliflower
- 2 lb. carrots
- 8 hot peppers (remove seeds)
- 2 Tbsp. mustard seed
- 2 Tbsp. celery seed
- 2 tsp. turmeric
- 1/2 tsp. ground cloves
- 5 c. sugar
- 5 c. cider vinegar
Directions

1Peel chayotes.

2Chop first seven vegetables and put in large kettle.

3Put 1/2 cup salt on these.

4Mix well and let stand for 3 hours.

5Mix once or twice.
