Ingredients
- 14 good size plum tomatoes
- 2 handfuls fresh basil, chopped or 1 Tbsp. dried basil
- 1 to 4 cloves garlic, minced (according to taste)
- 4 oz. fat-free Mozzarella cheese, shredded *
- 1 Tbsp. olive oil
- 16 oz. uncooked fusilli (corkscrew)
Directions

1Blanch tomatoes 10 seconds.

2Then peel and chop.

3Mix tomatoes, basil, garlic and cheese with oil.

4Let stand in covered bowl at room temperature for at least 3 hours (the longer the better).

5Cook the fusilli according to package directions. Drain.

6Add tomato mixture to the pasta.

7Mix well.

8Serve warm. Serves 5.
