- 3 medium yellow summer squash
- 6 Tbsp. butter or margarine
- 1/2 lb. fresh spinach
- 3 medium tomatoes, sliced
- 2 c. cottage cheese
- 1 1/2 c. crumbled crackers
- 1/4 tsp. oregano
- 1/4 tsp. parsley
- 1/4 tsp. sweet basil
- 1/4 tsp. minced garlic
- 6 slices Provolone cheese
Directions

1Trim and thinly slice summer squash.

2Saute in 2 tablespoons butter.

3Set aside.

4Tear spinach into bite-sized pieces and saute in 2 tablespoons butter.

5Set aside.

6Saute tomatoes in 2 tablespoons butter.

7Set aside.

8Combine cottage cheese, crackers and herbs in a small bowl.

9Put squash into a 2 quart baking dish. Add 1/2 cheese mixture, all of the spinach, remaining cheese mixture and tomato slices.

10Top with Provolone cheese arranged in a checkerboard fashion.

11Bake at 375° for 30 minutes.
