  • 1 prepared 9-inch pie crust (unbaked)
  • 2 lb. cream cheese (at room temperature)
  • 1/2 lb. extra sharp Cheddar cheese, grated (2 c.)
  • 1/2 c. sugar
  • 4 eggs
  • 2 egg yolks
  • 1/4 c. beer or ale
  • 1/4 c. heavy cream

Directions

    Preheat oven to 350°. Cut a 9-inch round of parchment paper and place in the bottom of a 9-inch spring-form pan. Line the bottom of the pan with the bottom of the crust. Reserve the rest of the crust. Bake for 10 minutes. Remove the pan from the oven and cool the crust. Press the remaining dough around the sides of the pan and attach it to the bottom crust.
