  • 2 c. yellow cornmeal
  • 1/2 c. flour
  • 1/2 c. sugar
  • 1 tsp. salt
  • 1 tsp. soda
  • 1/4 tsp. baking powder
  • 1 c. grated sharp Cheddar cheese
  • 2 c. buttermilk
  • 1/4 c. melted butter
  • 1/4 c. grated onion

    Combine dry ingredients. Add onion and mix together. Add buttermilk and shortening. Mix together. But do not beat. Bake 30 minutes at 350° in an iron skillet.
