  • 1/2 c. milk
  • 1/2 c. butter or oleo
  • 1/8 tsp. pepper
  • 1 c. flour
  • 1 c. sharp Cheddar cheese
  • 1/2 c. water
  • 1/4 tsp. salt
  • 1/8 tsp. ground nutmeg
  • 4 eggs

    Preheat oven to 400°.

    Grease 2 large cookie sheets with vegetable shortening.

    Combine milk, water, butter, salt, pepper and nutmeg in large saucepan.

    Bring to full rolling boil.

    Add flour all at once, stirring vigorously with a wooden spoon until mixture forms a thick, smooth ball that leaves the side of the pan clean.

    Remove from heat.

    Add eggs, one at a time, beating well with a wooden spoon after each addition until paste is shiny and smooth.

    Stir in cheese until melted.

    Drop paste by heaping teaspoonfuls, about 1 inch apart, onto prepared sheets.

    Bake in preheated oven for 10 minutes.

    Lower oven to 350°; bake 10 to 15 minutes, or until puffed and golden.

    Prick in several places with fork.
