Cheddar Cheese Rolls

Ingredients

  • 1 c. hot water
  • 1/4 c. sugar
  • 1/2 tsp. salt
  • 1 pkg. dry yeast
  • 1 tsp. sugar
  • 1/2 c. lukewarm water
  • 1 egg, well beaten
  • 3/4 c. Cheddar cheese
  • 3 1/2 c. flour
  • melted butter
  • 1/3 c. grated cheese

Directions

    Place hot water in a large bowl. Add sugar and salt. Cool to lukewarm.

    Sprinkle yeast and sugar over 1/2 cup lukewarm water. Stir.

    Cover and let stand until foaming and doubled in volume. Add to cooled water and sugar mixture.

    Add egg, 3/4 cup cheese and enough flour to make a firm dough.

    Toss onto a lightly floured board.

    Knead lightly until smooth and easy to handle. Form into balls.

    Arrange on a buttered cookie sheet.

    Cover and let rise until tripled in size. Bake at 375° for 15 minutes. Brush with butter. Sprinkle with grated cheese and return to oven until cheese is melted.
