Ingredients
- 1 large onion, thinly sliced
- 1 c. chopped celery
- 1/4 c. butter
- 1/4 c. flour
- 3/4 tsp. dry mustard
- 2 tsp. Worcestershire sauce
- 2 c. chicken broth
- 1 c. chopped carrots
- 3 c. pared and cubed potatoes
- 3 c. milk
- 3 c. shredded sharp Cheddar cheese
- 1/4 tsp. pepper
- salt (optional)
Directions

1Saute onion and celery in butter in kettle 3 minutes or until soft.

2Stir in flour, mustard and Worcestershire sauce.

3Cook, stirring 2 minutes.

4Stir in broth, carrots and potatoes.

5Bring to boil.

6Lower heat.

7Cover and simmer, stirring occasionally, 25 minutes or until potatoes are tender.

8Add milk.

9Cook over medium heat until almost boiling.

10Do not boil.
-
11Reduce heat to low.
-
12Stir in cheese until melted.

13Add pepper and salt, if you wish.

14Garnish with extra cheese.
