Cheddar Dijon Chicken

  • 5 boneless chicken breasts
  • 2/3 c. fine dry bread crumbs
  • 1 3/4 tsp. basil
  • 2 Tbsp. Dijon mustard
  • 1/4 c. vegetable oil
  • 2 eggs, lightly beaten
  • 1/2 c. shredded Cheddar cheese
  • 1 box Rice-A-Roni broccoli au gratin

Directions

    Combine bread crumbs and basil.

    Spread one side of each chicken breast with mustard.
  3. 3
    Coat chicken with bread crumbs, dip into egg and coat again with bread crumbs.

    Prepare Rice-A-Roni per box directions. In skillet, heat oil.

    Add chicken and cook 6 minutes on each side. Top rice with chicken, sprinkle cheese on top and bake at 300° for 10 minutes or until cheese is melted.
