- 1 c. minced carrots
- 1 c. diced celery
- 1 c. diced onion
- 1 c. green pepper, diced
- 1/2 c. margarine
- dry sherry
- 1/2 c. flour
- 2 qt. chicken broth
- 6 c. shredded Cheddar cheese
- 4 c. evaporated milk
- 1/2 tsp. salt
- white pepper
Directions

1Saute carrots, celery, onion and pepper for about 5 minutes in butter.

2Stir in flour until pasty.

3Add chicken broth while stirring constantly.

4Add cheese slowly until melted.

5Add evaporated milk, salt and pepper.

6If you want a smooth creamy soup, puree first 4 ingredients before mixing with flour, etc. Add 1/8 cup sherry just before serving.
