- 6 c. zucchini squash
- 2 egg yolks, beaten
- 1 c. (8 oz.) sour cream
- 2 Tbsp. all-purpose flour
- 2 stiffly beaten egg whites
- 1 1/2 c. Cheddar cheese
- 6 slices bacon, cooked
- 1 Tbsp. butter, melted
- 1/4 c. Ritz crackers, fine ground
Directions

1Salt cooked squash.

2Mix the next 3 ingredients; fold in the beaten egg whites.

3Layer half the squash and egg white mixture in 12 x 9-inch baking dish.

4Crumble strips of bacon on top.

5Repeat layers.

6Mix the butter and cracker crumbs; sprinkle over top. Bake in a 12 x 9-inch pan for 20 to 25 minutes at 350°.
