  • 4 slices bacon
  • 4 c. thinly sliced yellow squash
  • 2/3 c. chopped onion
  • 1/4 c. water
  • 2 eggs, separated
  • 1/2 c. sour cream
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. onion powder
  • 1 1/2 c. (6 oz.) shredded Cheddar cheese
  • 1 Tbsp. butter or oleo
  • 1/4 c. fine dry bread crumbs

Directions

    Place bacon in a skillet; fry until crisp.

    Drain bacon and set aside, after crumbling.

    Place squash and onion in a saucepan; cook until squash and onion are tender.

    Drain and cool slightly. Beat egg yolks until thick and lemon-colored; stir next 5 ingredients.

    Beat egg whites until stiff peaks form; fold into yolk mixture.
