Cheddar Supreme Cheese Cake

- 1 1/2 c. Zwieback crumbs
- 3 Tbsp. sugar (for crust)
- 2 tsp. grated lemon rind
- 6 Tbsp. or 3/4 stick butter or margarine, melted
- 4 (8 oz.) cream cheese
- 1 c. finely grated mild Cheddar cheese
- 1 3/4 c. sugar
- 5 eggs
- 1/2 c. cream (for whipping)
- 1/2 tsp. vanilla
Directions

1Mix Zwieback crumbs with 3 tablespoons sugar and 1 teaspoon grated lemon rind in small bowl.

2Blend in melted butter.

3Press evenly over bottom and sides of 8-inch spring-form pan.

4Set pan in a 12-inch long piece of foil; fold foil up along side to catch any butter that may bubble out.

5Chill while making filling.

6Mix all remaining ingredients.

7Pour into crust and bake at 500° for 12 minutes.

8Lower to 250° and bake for 2 hours or until firm on top.

9Cool.

10Garnish with canned or fresh fruit.
