  • 8 leaves chard chopped
  • 2 1/2 cups frozen mixed vegetables, thawed
  • 2 cups cheddar cheese grated
  • 1 onion large, chopped
  • 2 slices cooked bacon chopped, optional
  • 6 sheets frozen puff pastry thawed
  • 1 egg lightly beaten
  • salad to serve

    Preheat the oven to 400°F. Lightly grease 2 baking sheets.

    Place the chard in a bowl of boiling water for 5 seconds until wilted. Transfer to a bowl of iced water. Drain well and dry on paper towels.

    Mix chard, vegetables, cheese, onion and bacon (if using) in a large bowl. Season to taste. Cut each sheet of pastry into 4 squares. Spoon 2 tbsp vegetable mixture onto each pastry square. Brush edges with egg. Fold over to form triangles. Use a fork to seal edges. Place on prepared pans. Brush each triangle with egg.

    Bake for 15-20 mins until golden. Serve with salad.
