  • 12 tbsp (1 1/2 sticks) butter, at room temperature
  • 1 1/2 cups finely grated Cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 cups flour, sifted
  • 1 tsp paprika
  • 2 tbsp finely chopped walnuts

    Preheat the oven to 350°F. Line two baking sheets with parchment paper.

    Beat butter and cheeses in large bowl with an electric mixer on medium speed until well blended. Stir in flour, paprika, walnuts and 1 tsp salt. Mix well until dough forms a ball. Divide in half and pat each into a thick disc. Wrap in plastic wrap. Refrigerate for 1 hour.

    Roll out dough on lightly floured work surface to 1/4-inch thickness. Cut out shapes using a 2-inch star cookie cutter. Re-roll dough as necessary. Place onto prepared pans.

    Bake in batches for 12-15 mins, until golden. Cool in pan 2 mins. Remove from pan; completely on wire rack. Store in airtight containers or seal in cellophane bags to give as gifts.
