Ingredients

  • 1/4 c. butter
  • 1/2 c. flour
  • 1 c. milk
  • 1/4 tsp. salt
  • 2 tsp. chopped green pepper
  • 1/8 tsp. paprika
  • 1 1/2 c. grated Cheddar cheese
  • 1 well beaten egg
  • 1/2 c. bread crumbs
  • 1 slightly beaten egg
  • 2 Tbsp. water

    Melt butter.

    Stir in flour gradually, stirring mixture constantly.

    Add salt, paprika and green pepper.

    Beat cheese into well beaten egg.

    Add cheese and egg mixture to sauce.

    Cook over hot water until cheese is melted.

    Stir constantly.

    Put in refrigerator for 30 minutes.

    Mold into balls the size of a walnut.

    Roll in bread crumbs; dip in slightly beaten egg which should be diluted with 2 tablespoons water.

    Roll again in bread crumbs.

    Fry in deep hot fat for 1 or 2 minutes.

    Do not overcook. Drain on paper towels.
