- 1 lb. Cheddar cheese (1/2 mild, 1/2 sharp)
- 3/4 lb. butter or margarine (3 sticks)
- 4 c. self-rising flour
- cayenne pepper to taste
Directions

1Have all ingredients at room temperature.

2Cream butter; add cheese and blend well.

3Sift dry ingredients and add gradually to butter cheese mixture.

4Roll dough into long rolls 1 inch in diameter.

5Refrigerate dough for several hours or overnight. Slice into 1/4-inch rounds.

6Place on cookie sheet (ungreased). Bake at 450° for 8 minutes or until slightly brown or not quite brown at all!
