- 1 pkg. yeast
- 1 Tbsp. sugar
- 1 3/4 c. warm water
- 5 to 6 c. all-purpose flour
- 1 Tbsp. salt
- 1/2 stick softened butter
- 1 c. shredded Swiss or sharp Cheddar cheese
Directions

1Dissolve yeast with sugar and 1/4 cup water.

2Mix 5 cups flour with salt and make a well and add 1 1/2 cups water, butter and yeast.

3Stir and turn out with 1/2 to 1 cup flour.

4Knead 10 to 12 minutes.

5Cover and let rise 1 1/2 to 2 hours.

6Punch down and knead in the cheeses.

7Halve and let rest 10 minutes.

8Roll into a rectangle (11 x 6-inch) and let rest 2 to 3 minutes.

9Roll up and place in 8 x 4 x 2-inch well-greased bread tins.

10Let rise until top of tins.

11Bake at 375° for 30 minutes.

12Cool before slicing.
