Ingredients
- 1 c. white flour
- 1 c. corn meal
- 1 egg, lightly beaten
- 2 Tbsp. sugar or honey
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 c. milk
- 1/4 c. vegetable oil
- 1/2 c. finely minced onion
- 1 c. fresh or frozen corn
- 1/2 c. grated Cheddar cheese
Directions

1Heat the oil in a small skillet.

2Add the minced onion and saute over medium heat until the onion is soft and translucent. Set aside to cool.

3Beat together egg, sugar and milk.

4Combine flour, corn meal, baking powder and salt.

5Mix thoroughly. Combine flour mixture with egg mixture.

6Mix until well blended. Add corn, sauteed onions and grated cheese.

7Mix well.

8Spread into a buttered 8-inch baking pan.

9Bake at 375° for 25 minutes or until lightly browned and firm on top.
