- 1/3 c. plain yogurt
- 1/2 c. Cheddar or Monterey Jack, shredded
- 1 1/2 c. buttermilk
- 1 egg, beaten
- 1/4 c. hot salsa
- 1/2 c. fresh corn (optional)
- 2 c. cornmeal mix (self-rising)
- 2 Tbsp. vegetable oil
Directions

1Heat oven to 425°.

2In large bowl, combine all ingredients, except cornmeal and oil.
