  • 1/3 c. plain yogurt
  • 1/2 c. Cheddar or Monterey Jack, shredded
  • 1 1/2 c. buttermilk
  • 1 egg, beaten
  • 1/4 c. hot salsa
  • 1/2 c. fresh corn (optional)
  • 2 c. cornmeal mix (self-rising)
  • 2 Tbsp. vegetable oil

Directions

    In large bowl, combine all ingredients, except cornmeal and oil.
