- 16 ounces cream cheese
- 3/4 cup sugar
- 1 teaspoon vanilla
- 1 teaspoon lemon juice
- 2 eggs
- 18 vanilla wafers
- 18 cupcake paper cups
- 1 can pie filling choice
Directions

1Heat oven to 375 degrees.

2Put 1 vanilla wafer in bottom of each cup placed in muffin tin.

3Blend all ingredients until smooth and fill each cup 3/4 full.

4Bake 15 minutes.

5Immediately upon removing from oven, spoon on pie filling while cupcakes are warm.

6Leave in muffin tins and chill.

7Note: Can be frozen.

8Great for coffee breaks.
