Ingredients

  • 16 ounces cream cheese
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 2 eggs
  • 18 vanilla wafers
  • 18 cupcake paper cups
  • 1 can pie filling choice

Directions

    Heat oven to 375 degrees.

    Put 1 vanilla wafer in bottom of each cup placed in muffin tin.

    Blend all ingredients until smooth and fill each cup 3/4 full.

    Bake 15 minutes.

    Immediately upon removing from oven, spoon on pie filling while cupcakes are warm.

    Leave in muffin tins and chill.

    Note: Can be frozen.

    Great for coffee breaks.
