- 5 eggs
- 24 oz. cream cheese
- 1 c. sugar
- 1/2 tsp. vanilla
- vanilla wafers
- 1 1/2 c. sour cream
- 1/2 c. sugar
- 1/2 tsp. vanilla
- preserves or prepared fruit pie filling
Directions

1Blend eggs and cream cheese.

2Add 1 c. sugar, vanilla and blend until smooth.

3Line muffin tins with paper liners.

4Place a vanilla wafer in the bottom of each cup.

5Pour mixture over wafer.

6Fill about 3/4 full.

7Bake at 300° for 5 minutes.

8A well will form in the cupcake.

9Mix sour cream, 1/2 c. sugar and vanilla.

10Blend topping until smooth.

11Spread over cupcakes.

12Add 1/2 tsp. preserves or fruit pie filling to the top of each cupcake.

13Return to the oven for 5 minutes.

14Chill or freeze.
