  • 8 corn tortillas
  • 1 c. bottled picante sauce
  • 2 c. low-fat (1%) cottage cheese
  • 1 c. shredded reduced-fat Cheddar cheese (4 oz.)
  • 1/2 c. thinly sliced green onion
  • 1/2 tsp. dried oregano
  • 1/2 tsp. ground cumin
  • 1/4 tsp. garlic powder
  • 1/8 tsp. pepper
  • salt to taste

Directions

    Preheat oven to 350°.

    Spray with Pam a 6 x 10-inch baking pan. Stack tortillas and wrap tightly in aluminum foil.

    Heat for 10 minutes.

    While tortillas are heating, spread 1/3 cup picante in bottom of pan.

    Combine cottage cheese, 3/4 cup Cheddar cheese and remaining ingredients.
