Cheese Filled Triangles

- 1 lb. feta cheese or monterey jack
- 2 eggs, slightly beaten
- 1/4 c. snipped chives
- 1/4 tsp. white pepper
- 1 lb. frozen phyllo sheets, thawed
- 1/4 c. margarine or butter, melted
Directions

1Crumble cheese in a small bowl, and mash with a fork.

2Stir in eggs, chives and white pepper until well mixed.

3Cut phyllo sheets lengthwise into 3 equal strips.

4Cover with waxed paper, then with a damp towel to keep them from drying out.

5Using 2 layers of phyllo at a time, place 1 heaping tsp. filling on one end of strip.

6Fold end over end in a triangular shape to opposite sides (like a flag).

7Place on greased cookie sheet.

8Repeat. Heat oven to 350 degrees.

9Brush triangles with margarine.

10Bake until puffed and golden, about 20 minutes.
