- 1 c. grits
- 1 1/2 tsp. salt
- 4 c. boiling water
- 3 egg yolks
- 1/2 stick oleo
- 3 Tbsp. flour
- 1 Tbsp. dry mustard
- 3 c. grated cheese
- 3 egg whites
Directions

1Cook grits in boiling water and salt.

2Cool slightly.

3Add egg yolks, one at a time, and beat well after each addition.

4Melt oleo; add flour and mustard to it, then add this mixture to warm grits.

5Add 2 cups grated cheese; stir.

6Fold in stiffly beaten egg whites.

7Put in greased 9 x 13-inch glass baking dish and cover with the remaining cheese.

8Bake 30 to 40 minutes in a 350° oven.
