Cheese Mushroom Baskets

  • 100 grams filo pastry
  • 80 grams smoke bacon lardons
  • 140 grams exotic mushrooms
  • 150 grams goats cheese
  • 25 grams goats butter
  • 20 grams butter, melted
  • 2 shallots, finely diced
  • 4 clove of garlic, crushed
  • 1/2 grams finely chopped fresh parsley
  • 3 grams chives, finely chopped
  • 20 grams spinach
  • 25 ml boiled water

    Pre-heat an oven 190C / 170C fan.

    Butter the under side of 2 dishes with some of the melted butter.

    Layer some pastry over the dishes, buttering in between the layers.

    Cook in the oven for 12-15mins.

    Dry fry the lardons in a pan on a high heat.

    Reduce the heat and add the butter to melt.

    Add the shallot and garlic and sweat down.

    Add the mushrooms.

    Add some boiled water to deglaze the pan, then add the cheese to create the sauce.

    Remove the pastry baskets and place on a plate.

    Layer some spinach on the bottom of each, then pour over the cheese and mushroom sauce.
