- 350 g pasta
- 50 g flour
- 50 g butter
- 500 ml milk
- 1 bay leaf
- 2 garlic cloves, crushed
- 150 g speck
- 200 g swiss brown mushrooms, sliced
- salt
- pepper
- 50 cheese, grated
- 30 g parmesan cheese, grated
Directions

1Cook pasta in lightly salted water, drain and set aside.

2Slice mushrooms and dice speck into small pieces.

3Throw both of those in a pan to wilt the mushrooms and cook the speck.

4In a separate medium sized saucepan, melt the butter, tip in the flour and stir.

5Cook for one minute, then pour in a little of the milk.

6Keep adding the milk, little by little and stirring all the time to get rid of any lumps.

7Add the garlic and bay leaf to the sauce, along with some pepper and salt.

8Once the sauce is hot and thickened, remove from the heat and add the 50g grated cheese.

9Fold the pasta through your warm mushie mix.

10Remove the bay leaf from the sauce and fold that through too.

11Top with the parmesan and heat under a hot grill for 5-10 minutes till crisp and golden.
