Ingredients
- 6 medium potatoes
- 1 tsp. salt
- 2 c. shredded Cheddar cheese
- 1 1/2 c. sour cream, at room temperature
- 1/4 c. butter
- 2 Tbsp. butter
- 1/3 c. grated onion
- 1/4 tsp. pepper
Directions

1Cook potatoes in skins for 20 minutes.

2Let cool.

3Peel and grate potatoes.

4Over low heat, cook onion in butter.

5Add cheese and stir until almost melted.

6Remove from heat and blend in sour cream, salt and pepper.

7Fold in potatoes and put in greased casserole.

8Dot with butter.

9Bake for 25 minutes in a 350° oven. Serves 8.

10Use a 2-quart casserole.
