- 1 12 cups milk
- 2 tablespoons minute tapioca
- 1 egg (separate!)
- 3 tablespoons sugar
- 18 teaspoon salt
- 1 teaspoon real vanilla
- 2 (1 ounce) baker's unsweetened chocolate squares, melted
Directions

1Scald 1 cup of milk on the double boiler.

2Add the tapioca and cook for 20 minutes or until it is clear.

3Add sugar and salt.

4Add the tapioca to the egg yolk mixture.

5Put back over boiler and cook until thickened.

6Remove from heat.

7Add the stiffly beaten egg whites, vanilla, and chocolate; blend with the rest of the 1/2 cup of scalded milk.
