Cheese Potatoes

Ingredients

  • 2 sticks butter or margarine
  • 1 to 2 Tbsp. flour
  • 3 to 4 c. milk
  • 1 tsp. pepper
  • 1 tsp. salt
  • 1 (16 oz.) loaf Velveeta cheese
  • 10 to 12 medium potatoes, cut into bite size pieces and boiled until soft

Directions

    Melt butter in large saucepan.

    When butter is completely melted and bubbly, add flour 1 teaspoon at a time until mixture is thick, but still bubbly.

    Stir in salt and pepper.

    Add milk, one cup at a time, stirring constantly until mixture resembles gravy. Cut Velveeta into 2-inch cubes.

    Add 5 or 6 at a time, until sauce is thick and cheesy.

    Drain cooked potatoes and place in large casserole dish. Pour cheese sauce over potatoes.

    Place in 350° oven for 15 to 20 minutes or until top is slightly brown and sauce is bubbly.
