Country Side Chicken Bake

  • 1 c. uncooked rice
  • 1 c. celery slices
  • 3/4 c. chopped onion
  • 2 tsp. parsley flakes
  • 1/8 tsp. pepper
  • 1 can cream of mushroom soup
  • 3/4 c. mayonnaise
  • 1 1/4 c. water
  • 3 chicken breasts, split and skinned

    Place rice in greased 12 x 8-inch baking dish.

    Cover with combined vegetables and pepper.

    Combine soup and mayonnaise.

    Mix well.

    Gradually add water to soup mixture.

    Mix well.

    Pour 1/2 the soup mixture over vegetables and rice.

    Top with chicken pieces and remaining soup mixture.

    Bake at 350°, uncovered, for 1 hour or until chicken is tender and rice is cooked.
