  • 1 1/2 c. shredded sharp Cheddar cheese
  • 2 Tbsp. cornstarch
  • 1/2 tsp. paprika
  • dash of cayenne pepper
  • 1 tsp. dried thyme
  • 3 egg whites
  • 1/3 c. cracker crumbs
  • 1/3 c. grated almonds (optional)

Directions

    In a bowl, combine cheese, cornstarch, spices and herbs.

    Beat egg whites.

    Slowly stir egg whites into cheese mixture.

    Shape into small balls.

    Roll balls into cracker crumbs and almond mixture.

    Deep fry balls in hot oil, then drain on paper towels.
