- 3/4 c. water
- 1 tsp. instant minced onion
- 3/4 tsp. salt
- dash of crushed rosemary
- 3/4 c. precooked rice
- 1 c. shredded Cheddar cheese
- 1 (6 oz.) can evaporated milk
- 3 eggs, beaten
- 1 pkg. frozen mixed vegetables
Directions

1In a glass bowl, combine water, onion, salt and rosemary. Bring just to boiling, just about 3 to 4 minutes.

2Stir in rice. Cover tightly and let stand 5 minutes.

3Fluff with a fork.

4Stir in cheese, evaporated milk and eggs.

5Add vegetables.

6Bake, uncovered, in a flat casserole dish for 9 minutes, turning every 3 minutes, or until a knife inserted in center comes out clean.
