- 1 large onion, chopped
- vegetable oil
- 4 small zucchini, sliced
- 1 c. cooked rice
- 1 can mushroom soup
- 1/2 lb. Cheddar cheese, grated
Directions

1Cook onion in small amount of oil until tender; add zucchini and cook until slightly tender.

2In a small casserole dish, layer 1/2 of rice, then 1/2 of soup, 1/2 zucchini mixture and 1/2 of the cheese.

3Repeat layers.

4Bake for 30 minutes in a 350° oven.
