- 1 Tbsp. butter
- 1/2 Tbsp. flour
- salt and pepper to taste
- pinch of cayenne pepper
- 1 c. milk
- 1 egg yolk
- 1 Tbsp. Parmesan cheese
Directions

1Melt butter in small saucepan and stir in flour; salt and pepper to taste.

2Add milk, stirring continuously until sauce thickens.

3Remove pan from heat and stir in the egg yolk.

4Stir in the cheese.

5Makes about 1 1/4 cups.
