  • 1 Tbsp. butter
  • 1/2 Tbsp. flour
  • salt and pepper to taste
  • pinch of cayenne pepper
  • 1 c. milk
  • 1 egg yolk
  • 1 Tbsp. Parmesan cheese

Directions

    Melt butter in small saucepan and stir in flour; salt and pepper to taste.

    Add milk, stirring continuously until sauce thickens.

    Remove pan from heat and stir in the egg yolk.

    Stir in the cheese.

    Makes about 1 1/4 cups.
