Cheese Shrimp Casserole

  • 6 slices firm white bread, crusts removed
  • 4 Tbsp. butter, melted
  • 1 c. grated Swiss
  • 2 green onions, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. mustard
  • 2 Tbsp. minced parsley
  • 1/2 lb. small cooked shrimp
  • 3 eggs
  • 1 1/2 c. half and half
  • 1/2 c. sour cream

Directions

    Cut each slice of bread diagonally and dip in butter.

    Arrange 1/2 in bottom of an 8-inch square dish. Sprinkle 1/2 of cheese, onion, parsley and shrimp on top of bread slices.

    Repeat bread and cheese layers. Beat eggs, salt, mustard, milk and sour cream. Pour over casserole.

    Refrigerate overnight.

    Cook 30 to 40 minutes at 350° until puffed.
