Ingredients
- 1/4 c. reduced fat margarine
- 1/4 c. all purpose flour
- 1/2 t. salt
- 1/4 t. cayenne pepper
- 1 c. skim milk
- 1 c. shredded reduced fat cheddar
- 3 large egg whites
- 3 large egg yolks
- 1/4 t. cream of tartar
Directions

1Melt butter in a large saucepan over medium heat.

2Stir in next three ingredients.

3Cook until smooth and bubbly.

4Stir in milk and boil for 1 minute, stirring constantly.

5Stir in cheese and heat until melted.

6Remove from heat and set aside.

7Beat egg yolks on high with electric mixer for 3 minutes.

8Stir into cheese mixture. Set aside.

9Beat egg whites and cream of tartar with electric mixer on high until stiff.

10Fold egg whites into cheese mixture. Carefully pour into a well greased 1 quart souffl dish.

11Bake at 350 degrees for one hour.

12Serve immediately.
