Ingredients

  • 2 Tbsp. butter or margarine
  • 3 Tbsp. all-purpose flour
  • 1 c. milk
  • 3 oz. shredded Cheddar cheese
  • 1/2 tsp. salt
  • dash of cayenne pepper
  • 3 eggs, separated

Directions

    Place butter in saucepan and melt over medium heat.

    Blend in flour, stirring constantly.

    Add milk and cook until thick. Remove from heat.

    Add cheese, salt and cayenne pepper.

    Set aside.

    Place egg whites in a bowl and attach bowl and wire whip. On speed 8, whip until stiff, but not dry.

    Remove whites from bowl.

    Place egg yolks in clean bowl.

    Attach bowl and flat beater.

    On speed 6, beat 1 minute.

    Reduce to stir speed and gradually add cooked cheese mixture, about 30 seconds.

    Add egg whites and mix 15 seconds longer
