- 2 Tbsp. butter or margarine
- 3 Tbsp. all-purpose flour
- 1 c. milk
- 3 oz. shredded Cheddar cheese
- 1/2 tsp. salt
- dash of cayenne pepper
- 3 eggs, separated
Directions

1Place butter in saucepan and melt over medium heat.

2Blend in flour, stirring constantly.

3Add milk and cook until thick. Remove from heat.

4Add cheese, salt and cayenne pepper.

5Set aside.

6Place egg whites in a bowl and attach bowl and wire whip. On speed 8, whip until stiff, but not dry.

7Remove whites from bowl.

8Place egg yolks in clean bowl.

9Attach bowl and flat beater.

10On speed 6, beat 1 minute.

11Reduce to stir speed and gradually add cooked cheese mixture, about 30 seconds.

12Add egg whites and mix 15 seconds longer
