- 1 c. chopped or 3/4 c. grated cheese
- 2 Tbsp. butter
- 3 Tbsp. flour
- 1 c. milk
- 3 eggs
- 1/2 tsp. salt
- dash of cayenne or white pepper to taste
Directions

1Make a white sauce of flour, butter, seasoning and milk.

2Add cheese and cook until cheese melts.

3Add egg yolks and stir well. Let cool.

4When ready to bake, beat egg whites until stiff and fold into the cheese mixture.

5Pour into well-buttered baking pan. Cook at 300° for 30 to 45 minutes.
