  • 1 qt. chicken broth
  • 1 qt. water
  • 1 c. chopped celery
  • 1/4 c. dried minced onion
  • 2 1/2 c. cubed potatoes
  • 1 (10 oz.) bag mixed frozen veggies
  • 1 lb. cubed Velveeta cheese

Directions

    Cook broth, celery and onion for 20 minutes.

    Add potatoes and veggies.

    Cook for 30 minutes.

    Add the soup and cheese.

    Heat on medium low until the cheese melts, taking care not to scorch the soup.
