- 3/4 c. shredded carrots
- 1/4 c. butter or margarine
- 2 1/2 c. milk
- 2 c. (8 oz.) shredded natural Cheddar cheese
- 1/8 tsp. salt
- dash of ground pepper
- 1/2 c. chopped onion
- 1/4 c. flour
- 2/3 c. beer
Directions

1Cook carrots and onions in butter until tender.

2Add flour and blend in smoothly.

3Stir in milk and beer.

4Cook, stirring over medium heat until liquid comes to boiling and is thickened.

5Add cheese and seasonings, stirring until melted.

6Best if doubled.
