Ingredients

  • 1 c. chopped celery
  • 1 c. chopped onions
  • 2 pkg. chicken bouillon
  • 1 qt. water
  • 1 c. sliced carrots
  • 2 1/2 c. diced raw potatoes
  • 1 (20 oz.) bag mixed vegetables
  • 2 cans cream of chicken soup
  • 1 lb. Velveeta cheese

Directions

    In large pot, combine celery, onions, bouillon and water. Bring to a boil for 15 minutes.

    Add carrots, potatoes and vegetables.

    Simmer 40 to 50 minutes.

    Just before serving, add 2 cans soup and cheese (cut cheese into cubes for faster melting). Heat until cheese melts and soup is heated through.
