Ingredients

  • 6 c. potatoes, peeled and diced
  • 2 medium onions, diced
  • 1 bunch celery, diced
  • 1 lb. carrots, peeled and diced
  • 6 chicken bouillon cubes
  • water (to cover vegetables)
  • 1 lb. Velveeta cheese
  • 8 oz. sour cream

Directions

    Place diced potatoes, onions, celery, carrots, bouillon cubes and water in a large pot.

    Simmer until vegetables are soft. Remove from heat.

    Place in food processor or blender to puree vegetables.

    Return to large pot.

    Add diced cheese to soup. Simmer until cheese has melted.

    Remove from heat.

    Stir in sour cream.

    Can be made ahead and refrigerated or freeze until ready to heat and serve.
