- 6 c. potatoes, peeled and diced
- 2 medium onions, diced
- 1 bunch celery, diced
- 1 lb. carrots, peeled and diced
- 6 chicken bouillon cubes
- water (to cover vegetables)
- 1 lb. Velveeta cheese
- 8 oz. sour cream
Directions

1Place diced potatoes, onions, celery, carrots, bouillon cubes and water in a large pot.

2Simmer until vegetables are soft. Remove from heat.

3Place in food processor or blender to puree vegetables.

4Return to large pot.

5Add diced cheese to soup. Simmer until cheese has melted.

6Remove from heat.

7Stir in sour cream.

8Can be made ahead and refrigerated or freeze until ready to heat and serve.
