Cheese Spinach Pie

  • 1/2 c. chopped onion
  • 1 Tbsp. margarine
  • 1/4 lb. sliced cheese
  • 1 c. cooked spinach, chopped and drained
  • 3 large eggs
  • 1/3 to 1/2 c. milk
  • 1/2 tsp. salt
  • dash of pepper
  • 9-inch pie shell or thin biscuit dough to fit a 9-inch pie pan

Directions

    Cook onion in margarine until tender; cool.

    Lay slices of cheese over pie dough.

    Follow with spinach, then onions.

    Beat eggs, adding enough milk to make 1 cup.

    Add seasoning and pour over ingredients in the pie shell.

    Bake in 400° oven about 35 minutes or until a knife comes out clean.

    Serve piping hot.

    (Can be frozen after baking.)
