- 2 1/2 c. milk
- 1 c. yellow cornmeal
- 2 Tbsp. melted butter
- 1 tsp. baking powder
- 1 tsp. salt
- 4 oz. grated sharp Cheddar cheese
- 4 eggs, separated
- 1/4 tsp. cream of tartar
- pinch of salt
Directions

1Preheat oven to 375°.

2Grease a 2-quart souffle dish.

3Warm milk over medium-low heat until hot.

4Do not boil.

5Gradually add cornmeal, stirring constantly.

6Blend in melted butter, baking powder and salt.

7Cook until very smooth and thick.

8Stir in cheese.

9Beat yolks in a bowl until light.

10Gradually stir yolks into cornmeal mixture.

11Beat egg whites with cream of tartar and salt in a large bowl until stiff.

12Fold into cornmeal and then pour into prepared souffle dish.

13Bake until puffed and brown, about 40 minutes.

14Serve immediately.
