Ingredients

  • 1 (4 oz.) jar chopped pimientos
  • 1 (8 oz.) carton pimiento cheese
  • 1 c. chopped pecans
  • 1/8 tsp. pepper
  • 2 Tbsp. chili powder
  • 2 Tbsp. cayenne pepper
  • 1 (8 oz.) pkg. cream cheese (room temperature)
  • 2 c. (8 oz. pkg.) shredded sharp Cheddar cheese
  • 1/2 tsp. salt
  • 1/4 to 1/2 tsp. garlic powder
  • 2 Tbsp. paprika

Directions

    Drain the pimientos and chop finely (or mash them with the back of a fork).

    Combine the 3 cheeses in a large mixing bowl and mix well.

    Add the pimientos, pecans, salt, pepper and garlic powder.

    Mix well and shape into 2 balls.

    Sprinkle the chili powder, paprika and cayenne pepper on waxed paper or plastic wrap. Roll each ball in the spices until completely covered and refrigerate or freeze.
