Cheese-Stuffed Peppers

- 6 green peppers
- 1 1/2 c. cottage cheese
- 2 1/2 c. cooked rice
- 1 egg
- salt and pepper
- buttered soft crumbs
Directions

1Wash peppers.

2Cut off about 1/2 inch of the tops.

3Remove stems, seeds and white fiber.

4Drop into boiling salted water; cook about 5 minutes, or until barely tender.

5Drain.

6Mix the remaining ingredients, except for the bread crumbs.

7Taste to check seasoning; pepper may be needed.

8Add the chopped pepper tops.

9Fill the peppers with this mixture.

10Top with bread crumbs and place in a buttered baking pan.

11Bake at 375° for about 25 minutes.

12Serves 6.
